Lamb and feta burgers

Lamb and feta burgers


  • 2 slices wholemeal bread
  • ½ cup red wine
  • 500 grams minced lamb
  • 1 onion, peeled and finely chopped
  • 2 cloves garlic, peeled and chopped or 1 teaspoon minced
  • 3-4 dried tomatoes in oil with 2 tablespoons of the oil
  • 1 teaspoon cracked pepper
  • ¼ cup chopped parsley
  • 100 grams diced feta cheese
  • ¼ cup chopped stuffed olives, optional


  1. Crumb the slices of bread and soak with the wine for a few minutes while you collect the other ingredients.
  2. In a bowl, mix together the soaked breadcrumbs, minced lamb, onion, garlic, tomatoes and oil, pepper, parsley, feta and olives.
  3. Make into 8 large patties (place in an airtight container until required, stacked with plastic wrap or baking paper between the layers). BBQ over a moderate heat for 15-20 minutes so the patties are medium-rare and not blackened. Serve in a toasted bun or on slices of grilled fresh ciabatta loaf with summer vegetables.
