Kumara And Corned Beef Hash Patties

These Patties would be perfect to serve for lunch or a casual dinner.

Ingredients

  • 750 grams kumara, peeled and chopped
  • 1 small onion, peeled and finely chopped
  • 1 tsp curry powder
  • 340 gram can corned beef, chilled
  • 227 gram can crushed pineapple in juice, very well drained
  • 1/2 cup grated cheddar cheese
  • 1 egg
  • 1/4 cup Worcestershire sauce

Method

  1. Cook the kumara in boiling salted water until tender, drain and mash.
  2. Cook the onion in a dash of oil in a frying pan until soft but not coloured. Add the curry powder and cook for a further minute.
  3. Add the onions to the kumara with the corned beef, pineapple, cheese, egg and Worcestershire sauce and mix well. Flake in the corned beef and fold through gently.
  4. Shape into 8 even-sized patties and pan fry in a little oil for 6-7 minutes until hot and golden, turning once.
  5. Serve topped with a quick salsa prepared from diced tomato, celery and chopped parsley. Accompany with your favourite brunch or lunch ingredients.
