This is a great way to get the kid's to eat their vegetables.
Ingredients
- 500 grams lean beef or lamb mince
- 1 small onion, finely diced
- 1 tablespoon Vegemite
- 1 tablespoon flour
- ½ cup tomato or condensed tomato soup
- 1½ cups beef stock
- 1 large kumara, peeled and diced
- 3 cups frozen mixed vegetables or diced left-over cooked vegetables
Method
- Brown the mince in a lidded frying pan and set aside. Cook the onion until lightly browned, adding a dash more oil if required.
- Mix together the marmite, flour, tomato paste and stock and pour into the pan. Return the mince to the pan with the kumara and stir to mix evenly.
- Cover and simmer for 10-15 minutes until the kumara is almost cooked.
- Scatter the frozen vegetables on top, cover and simmer a further 10 minutes. Serve on toasted hamburger buns with tomato sauce.
