
Ingredients
- 45 ml (3 tablespoons) gin
- 15 ml (1 tablespoon) fresh lemon juice
- 15 ml (1 tablespoon) kaffir lime-infused sugar syrup
- ginger beer
Method
- Combine gin, lemon juice and kaffir-lime sugar syrup in a shaker. Fill with ice and shake well. Strain into a tall glass filled with ice. Top it up with the ginger beer and garnish with a lime wheel. Stir well.
Cooks Tips
- To make sugar syrup, stir equal quantities of water and sugar together over a moderate heat until dissolved. Cool. Keep refrigerated. - To prepare kaffir-lime sugar syrup, soak 5 or 6 crushed kaffir lime leaves in 500ml of sugar syrup overnight.
