Jamaican Baked Squash

Jamaican Baked Squash

Squashes are delicious baked whole. Just scoop out the seedy centre and fill with favourite flavourings and then bake until tender


  • 4 gem squashes
  • 4 tblsp butter
  • 4 thin slices fresh ginger
  • pinch ground allspice or 4 whole allspice berries
  • dash dark rum (optional)


  1. Using a sharp knife cut around the core of the squashes and remove. Use a spoon to scoop out the seed from the centre.
  2. Fill the centre with the butter, ginger and spice. Add a drizzle of rum to each squash if using Place the core back into the centre and stand in an ovenproof dish or on a foil lined tray.
  3. Bake at 180ÂșC for 35-40 minutes until the flesh is soft when pierced with a skewer.
