I remember Jaffas rolling down the picture theatre from the back of the seats and these muffins have that wonderful chocolate and orange flavour.
Ingredients
- 2½ cups flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 cup caster sugar
- ½ cup cocoa
- 1½ cups chocolate chips
- grated rind of 2 oranges
- ¼ cup orange juice
- 2 eggs
- 1 cup sour cream
- ½ cup each water and milk
- 100 grams butter, melted and cooled
Method
- Sift the flour, baking powder, baking soda, sugar and cocoa into a bowl. Stir through the chocolate chips and make a well in the centre.
- In a jug, mix together the grated orange rind, orange juice, eggs, sour cream, water and milk. Stir into the dry ingredients and fold in the melted butter.
- Divide the mixture evenly among 12 well-greased muffin tins.
- Bake at 220ºC for 15-20 minutes until cooked. Cool in the tins for 5 minutes before serving.
Cooks Tips
- I like to top them with orange icing and chocolate balls or chips. Grate the rind from 2 oranges and place in a bowl with 25 grams softened butter and 1½ cups icing sugar. Blend in sufficient orange juice to make a thick spreadable icing.
