Jaffa muffins

Jaffa muffins

I remember Jaffas rolling down the picture theatre from the back of the seats and these muffins have that wonderful chocolate and orange flavour.

Ingredients

  • 2½ cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup caster sugar
  • ½ cup cocoa
  • 1½ cups chocolate chips
  • grated rind of 2 oranges
  • ¼ cup orange juice
  • 2 eggs
  • 1 cup sour cream
  • ½ cup each water and milk
  • 100 grams butter, melted and cooled

Method

  1. Sift the flour, baking powder, baking soda, sugar and cocoa into a bowl. Stir through the chocolate chips and make a well in the centre.
  2. In a jug, mix together the grated orange rind, orange juice, eggs, sour cream, water and milk. Stir into the dry ingredients and fold in the melted butter.
  3. Divide the mixture evenly among 12 well-greased muffin tins.
  4. Bake at 220ºC for 15-20 minutes until cooked. Cool in the tins for 5 minutes before serving.

Cooks Tips

- I like to top them with orange icing and chocolate balls or chips. Grate the rind from 2 oranges and place in a bowl with 25 grams softened butter and 1½ cups icing sugar. Blend in sufficient orange juice to make a thick spreadable icing.
