Great for breakfast or brunch topped with grilled bacon and tomato.
Ingredients
- 2 cups mashed floury potatoes
- 1 tsp salt
- 25g butter
- 3-4 tbsp flour
Method
- Mix together the warm mashed potato, salt and butter with sufficient flour to form a stiff dough.
- Roll out to a 1cm thick round and cut into 6 even wedges.
- Heat a griddle or frying pan until hot and add the potato wedges.
- Cook the potato wedges until brown and then flip and cook the other side until golden.
