Irish Potato Bread

Irish Potato Bread

Great for breakfast or brunch topped with grilled bacon and tomato.

Ingredients

  • 2 cups mashed floury potatoes
  • 1 tsp salt
  • 25g butter
  • 3-4 tbsp flour

Method

  1. Mix together the warm mashed potato, salt and butter with sufficient flour to form a stiff dough.
  2. Roll out to a 1cm thick round and cut into 6 even wedges.
  3. Heat a griddle or frying pan until hot and add the potato wedges.
  4. Cook the potato wedges until brown and then flip and cook the other side until golden.
