Ingredients
- 4 even-sized baking potatoes, scrubbed
- 400 grams lean beef or lamb mince
- 3 spring onions, trimmed and chopped
- 2 teaspoons minced garlic
- ½ cup HP sauce
- ¼ cup beef stock
- ½ cup chopped prunes or raisins
- 2 tablespoons grated cheese
- 2 tablespoons chopped fresh parsley or chives
Method
- Preheat the oven to 190ºC. Prick the potatoes with a fork and bake the potatoes for 1 hour until tender.
- Brown the mince quickly. Add the spring onions, garlic, HP sauce, stock and prunes or raisins. Cook for 5 minutes stirring regularly.
- Cut the top off each potato and carefully scoop out most of the flesh and mix with the mince. Return the filling to the potato, piling up as high as necessary. Top with the grated cheese.
- Return to the oven for about 10 minutes and bake until golden brown and hot. Serve garnished with chopped parsley or chives.
Cooks Tips
Microwave the potatoes to save time and then place in the oven to cook at Point 4.
