Honeyed pear and bran muffins

Honeyed pear and bran muffins

If you like bran muffins, then these pear and lemon muffins will become a favourite I'm sure.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ cup brown sugar
  • pinch salt
  • 1 cup bran
  • grated rind and juice of 2 juicy lemons
  • 2 eggs
  • ½ cup plain non-fat yoghurt
  • ¼ cup water
  • 125 grams butter, melted and cooled
  • 1 large juicy ripe pear, peeled, cored and finely diced (or use 2 small pears)

Method

  1. Sift the flour, baking powder, baking soda, brown sugar and salt into a bowl. Stir in the bran and make a well in the centre.
  2. In a jug, mix together the lemon rind and juice, eggs, yoghurt and water. Stir into the dry ingredients and fold in the melted butter and pear.
  3. Divide evenly among 12 well-greased muffin tins.
  4. Bake at 220ºC for 20 minutes until well risen and golden. Stand in the tins for 5 mintues before serving.

Cooks Tips

- Serve these muffins with Honey Cream in place of butter. Whip together 1 cup cream with ¼ cup liquid honey. - You can vary the flavour of these muffins by using honey in place of brown sugar and using diced apple or nashi in place of pears.
