Ingredients
- 1 red onion, sliced
- 4 skinless, boneless chicken breasts
- 3 tblsp soy
- 2 tblsp runny honey
- 1-2 tsp minced chilli
- 2 tsp minced ginger
- ½ tsp Chinese five spice
- ¼ Chinese cabbage
- ½ red pepper
- 2 stalks celery
- 100 grams snowpeas
- 3 spring onions
- 1 tblsp soy
- 2 tsp runny honey
- 1 tblsp sesame oil
- 1 tblsp olive oil
- rind and juice 2 limes or 1 lemon
- 2 tsp toasted sesame seeds
Method
- Divide red onion between 4 30cm-square pieces of baking paper, then place a chicken breast on each square.
- Combine soy, runny honey, minced chilli, minced ginger and Chinese five spice in a small bowl. Brush chicken liberally with glaze. Fold over paper and twist ends to seal.
- Cook at 180ºC for 30 minutes or until chicken is cooked through and golden.
- Meanwhile, slice Chinese cabbage, red pepper, celery, snowpeas and spring onions.
- To make dressing, combine soy, runny honey, sesame oil, olive oil, limes or lemon.
- To serve, add dressing and sprinkle over sesame seeds.
