Honey Spiced Chicken Parcels With Chinese Slaw

Ingredients

  • 1 red onion, sliced
  • 4 skinless, boneless chicken breasts
  • 3 tblsp soy
  • 2 tblsp runny honey
  • 1-2 tsp minced chilli
  • 2 tsp minced ginger
  • ½ tsp Chinese five spice
  • ¼ Chinese cabbage
  • ½ red pepper
  • 2 stalks celery
  • 100 grams snowpeas
  • 3 spring onions
  • 1 tblsp soy
  • 2 tsp runny honey
  • 1 tblsp sesame oil
  • 1 tblsp olive oil
  • rind and juice 2 limes or 1 lemon
  • 2 tsp toasted sesame seeds

Method

  1. Divide red onion between 4 30cm-square pieces of baking paper, then place a chicken breast on each square.
  2. Combine soy, runny honey, minced chilli, minced ginger and Chinese five spice in a small bowl. Brush chicken liberally with glaze. Fold over paper and twist ends to seal.
  3. Cook at 180ºC for 30 minutes or until chicken is cooked through and golden.
  4. Meanwhile, slice Chinese cabbage, red pepper, celery, snowpeas and spring onions.
  5. To make dressing, combine soy, runny honey, sesame oil, olive oil, limes or lemon.
  6. To serve, add dressing and sprinkle over sesame seeds.
