This slice may be chewy but it is delicious.
Ingredients
- 1 cup self rising flour
- 3-4 cup sugar
- 1 cup rolled oats
- 1 cup desiccated coconut
- 125 grams butter, melted
- 2 tblsp creamed or runny honey
- 1 egg, lightly beaten
- 0 few drops vanilla essence
- 1/2 cup chopped walnuts or pecans
Method
- Sift the flour into a bowl. Stir in the oats, sugar and coconut.
- Beat together the melted butter, honey, egg and vanilla essence and mix into the dry ingredients with the nuts.
- Spread the mixture into a well-greased and lined 20cm x 30cm slice tin.
- Bake at 160°C for 25-30 minutes until cooked. Cool in the tin for 10 minutes before spreading over the Honey Icing.
Honey Icing
- Blend together 2 cups sifted icing sugar with 2 tblsp softened butter and 3 tblsp honey together, adding a dash of milk to make an icing of spreadable consistency if needed.
