For the best flavour, make the loaf with a very fragrant strong brew of Earl Grey tea and if wished add a little ground ginger or cardamom for a spicy touch.
Ingredients
- 125 grams butter, softened
- ½ cup sugar
- ¼ cup runny honey
- 2 eggs, beaten
- ½ cup strong cold Earl Grey tea
- 1½ cups self raising flour
- ¼ cup walnuts, roughly chopped
- 2 tablespoons runny honey
Method
- Cream the butter an dsugar until light and fluffy. Gradually beat in the first measure of honey with the eggs and half the tea.
- Carefully fold in the sifted flour, alternatively with the remaining tea and walnuts. Turn into a greased and lined 21x11cm loaf tin.
- Bake the loaf at 170ºC for 1 hour or until a skewer inserted comes out clean.
- Heat the second measure of honey in the microwave for 10 seconds, brush over the top of the hot loaf. Cool in the tin for 10-15 minutes before turning out onto a cake rack. Serve warm or cold.
