Ingredients
- 2 cups beef or chicken stock
- 1 tblsp tomato paste
- ½ onion, peeled and finely chopped
- ¼ cup sweet sherry
- 2 tblsp rewarewa honey
- 1 bay leaf
- ½ carrot, peeled and finely chopped
Method
- In a saucepan put the beef or chicken stock, honey, tomato paste, bay leaf, onion and carrot and simmer gently until reduced by half.
- Strain, and add the sherry. Season with salt and pepper.
- If wished thicken with 1 tsp cornflour mixed to a paste with 1 tblsp water.
