Honey Jus

  • Makes 1 cup
Honey Jus

Ingredients

  • 2 cups beef or chicken stock
  • 1 tblsp tomato paste
  • ½ onion, peeled and finely chopped
  • ¼ cup sweet sherry
  • 2 tblsp rewarewa honey
  • 1 bay leaf
  • ½ carrot, peeled and finely chopped

Method

  1. In a saucepan put the beef or chicken stock, honey, tomato paste, bay leaf, onion and carrot and simmer gently until reduced by half.
  2. Strain, and add the sherry. Season with salt and pepper.
  3. If wished thicken with 1 tsp cornflour mixed to a paste with 1 tblsp water.
