Honey Glazed Corned Beef With Parsley And Mustard Sauce

It is so easy to jazz-up a piece of corned beef. Once cooked just glaze it with your favourite honey. It will look and taste sensational.

Ingredients

  • 1 kg piece Quality Mark corned beef
  • 2 onions, peeled and halved
  • 1 orange, halved
  • 2-3 stalks celery, halved
  • 1/2 cup brown sugar
  • 1 tblsp honey to glaze

Parsley and Mustard

  • 50 grams butter
  • 2 tblsp flour
  • 1 cup milk
  • 2 tblsp chopped parsley
  • 1 tblsp prepared mustard
  • salt and pepper to season

Method

  1. Remove the corned beef from the bag and rinse well. Place in a saucepan with the onion, orange, celery and brown sugar. Cover with cold water.
  2. Bring slowly to the boil and then lower the heat to a simmer and cook for 1 hour or until the meat can easily be pierced with a skewer.
  3. Transfer the meat to a roasting dish and cut a criss-cross pattern into the fat layer on top. Spread the honey on top and place under a hot grill for 1-2 minutes until golden.
  4. Serve sliced with vegetables and the Parsley and Mustard Sauce.

Parsley and Mustard Sauce

  1. Heat the butter in a saucepan and add the flour. Cook until frothy.
  2. Stir in the milk slowly to make a smooth sauce. Cook for 1 minute stirring constantly.
  3. Add the parsley and mustard and season well with salt and pepper.
