It is so easy to jazz-up a piece of corned beef. Once cooked just glaze it with your favourite honey. It will look and taste sensational.
Ingredients
- 1 kg piece Quality Mark corned beef
- 2 onions, peeled and halved
- 1 orange, halved
- 2-3 stalks celery, halved
- 1/2 cup brown sugar
- 1 tblsp honey to glaze
Parsley and Mustard
- 50 grams butter
- 2 tblsp flour
- 1 cup milk
- 2 tblsp chopped parsley
- 1 tblsp prepared mustard
- salt and pepper to season
Method
- Remove the corned beef from the bag and rinse well. Place in a saucepan with the onion, orange, celery and brown sugar. Cover with cold water.
- Bring slowly to the boil and then lower the heat to a simmer and cook for 1 hour or until the meat can easily be pierced with a skewer.
- Transfer the meat to a roasting dish and cut a criss-cross pattern into the fat layer on top. Spread the honey on top and place under a hot grill for 1-2 minutes until golden.
- Serve sliced with vegetables and the Parsley and Mustard Sauce.
Parsley and Mustard Sauce
- Heat the butter in a saucepan and add the flour. Cook until frothy.
- Stir in the milk slowly to make a smooth sauce. Cook for 1 minute stirring constantly.
- Add the parsley and mustard and season well with salt and pepper.
