Serve this loaf warm with ice cream or cold and lightly buttered.
Ingredients
- 2 cups self raising flour
- 1 teaspoon mixed spice
- 1 cup mashed banana or feijoas
- ¾ cup honey (suggest sheer or mellow style)
- 1 egg
- grated rind one orange
- 100 grams butter, softened
Method
- Pre-heat the oven to 180ºC and set the rack in the centre of the oven. Grease and line with baking paper a 22cm x 9cm x 6cm (6-cup-capacity) loaf tin.
- Stir the flour and mixed spice together in a medium-sized bowl until well-mixed. Make a well in the centre by pushing the flour out to the edges of the bowl.
- In a jug beat together the banana or feijoa, honey and orange rind together well. Pour into the centre and add the soft butter.
- Beat well for one minute with a wooden spoon until soft and whipped in texture. Transfer to the prepared cake tin and level off.
- Bake in the pre-heated oven for 45 minutes or until a skewer inserted comes out clean. Remove from the oven and stand for 10 minutes before turning out onto a cake rack to cool.
- Serve warm with ice cream or cold and lightly buttered.
