Cereals are great standby ingredients to prepare traditional tin-filler cookies. Add extra flavour with the grated rind of a lemon or orange.
Ingredients
- 150 g butter
- 3/4 cup sugar
- 1 egg
- 1 tsp vaniilla essence
- 1 1/2 cups self raising flour, shifted
- 1 1/2 cups cornflakes
- 1/2 cup chopped walnuts,peanuts or pecans
Method
- Beat the butter and sugar to a cream
- Add the egg and vanilla and beat well.
- Mix in the flour, cornflakes and walnuts.
- Place teaspoonfuls onto a greased baking tray.
- Bake at 180ÂșC for 15-18 minutes or until golden.
- Transfer to a cake rack to cool. Makes 30
Cooks Tips
If you do not have any cornflakes use crushed Weetbix or even Rice Bubbles.
