Herbed Lamb Schnitzel With Minted Honey Carrots

Ingredients

  • 8 slices bread
  • finely chopped fresh rosemary
  • 4-6 lamb schnitzels
  • 2 tblsp flour
  • 1 egg
  • ¼-½ cup milk
  • knob of butter

Minted Honey Carrots

  • 4 medium-sized carrots
  • 1 tblsp honey
  • finely chopped fresh mint
  • pepper for seasoning

Method

  1. To make fresh breadcrumbs, crumb bread and toss with chopped fresh rosemary.
  2. Dust each lamb schnitzel with flour. Combine milk and egg and dip the schnitzel into the egg mixture. Coat with breadcrumb mixture.
  3. Heat butter in a frying pan and cook the schnitzels on each side for about 3 minutes.
  4. Serve with slices of lemon and fresh herbs. This dish is great served with Minted Honey Carrots.

Minted Honey Carrots

  1. Scrub carrots well and slice thinly. Cook in a little water until tender and then toss with your favourite honey and plenty of chopped fresh mint and pepper. For those who like butter add a knob for additional flavour.
