Herbed Goats Cheese Pizza

Ingredients

  • 1 quantity basic pizza dough
  • 125-130 grams soft goats cheese (see Cook\'s Tip)
  • 4 tblsp creme fraiche, sour cream or cream
  • 2 tblsp chopped sage, chives and parsley
  • 12-16 small vine ripened tomatoes
  • 1 cup freshly grated parmesan cheese
  • 1 small-medium red onion, peeled and finely sliced
  • 2-3 handfuls baby rocket leaves
  • 1 cup loosely packed Italian parsley
  • 2-3 tblsp extra virgin olive oil
  • ½-¾ cup black olives

Method

  1. Prepare the pizza dough. While it is rising, prepare the topping.
  2. Mix together the goat cheese, creme fraiche and herbs. Season with pepper. The mixture must be spreadable so if it is stiff, warm in the microwave. Cut a small cross in the tomato skin, leaving the calyx intact.
  3. When the dough is ready, divide in half and quickly roll each section out to a 23-25cm round. Transfer to a baking paper-lined tray or preheated pizza stone.
  4. Spread each round with half the goat cheese mixture and place the tomatoes evenly on top. Scatter over the grated parmesan and onion slices.
  5. Fan bake at 230ºC in the middle of the oven for 10 minutes until the dough is cooked and golden. Toss the rocket and parsley leaves with olive oil and scatter over with black olives.

Cooks Tips

We used President Goats Cheese in this recipe. You can substitute with a soft feta-style goat cheese.
