Hearty sausage casserole

This is a delicious basic family recipe.


  • 500 grams little pork or beef sausages
  • 1 onion, peeled and sliced
  • 1 teaspoon minced garlic
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 500 grams pumpkin, peeled and cubed
  • 1 400-gram can whole tomatoes in juice, halved
  • 1½ cups beef or chicken stock
  • 1 400-gram can butter beans, rinsed and well-drained
  • 2 tablespoons chopped fresh parsley


  1. Heat a dash of oil in a large saucepan and quickly brown the sausages on all sides. Set aside.
  2. Add the onion and garlic to the pan and cook over a low heat for 4-5 minutes, stirring occasionally until the onion begins to soften. Do not cook over a high heat as the garlic will burn before the onion begins to soften.
  3. Add the tomato paste and paprika and cook for a further 1 minute.
  4. Return the sausages to the pan with the pumpkin, tomatoes and juice and stock. Cover and simmer for 25-30 minutes until the pumpkin is just tender. Add the butter beans and cook for a further 3 minutes until everything is hot.
  5. Season the dish with salt and pepper and sprinkle over the parsley just before serving.

Cooks Tips

- Jazz this dish up with a can of Mediterranean or Mexican-flavoured tomatoes.
