This is a delicious basic family recipe.
Ingredients
- 500 grams little pork or beef sausages
- 1 onion, peeled and sliced
- 1 teaspoon minced garlic
- 2 tablespoons tomato paste
- 1 tablespoon paprika
- 500 grams pumpkin, peeled and cubed
- 1 400-gram can whole tomatoes in juice, halved
- 1½ cups beef or chicken stock
- 1 400-gram can butter beans, rinsed and well-drained
- 2 tablespoons chopped fresh parsley
Method
- Heat a dash of oil in a large saucepan and quickly brown the sausages on all sides. Set aside.
- Add the onion and garlic to the pan and cook over a low heat for 4-5 minutes, stirring occasionally until the onion begins to soften. Do not cook over a high heat as the garlic will burn before the onion begins to soften.
- Add the tomato paste and paprika and cook for a further 1 minute.
- Return the sausages to the pan with the pumpkin, tomatoes and juice and stock. Cover and simmer for 25-30 minutes until the pumpkin is just tender. Add the butter beans and cook for a further 3 minutes until everything is hot.
- Season the dish with salt and pepper and sprinkle over the parsley just before serving.

- Jazz this dish up with a can of Mediterranean or Mexican-flavoured tomatoes.
