Ham And Oyster Mushroom Stir-fry


  • 1 head broccoli, trimmed
  • 6 spring onions, trimmed
  • 2 tblsp oil
  • 2 ham steaks, finely sliced
  • 2 tblsp each oyster sauce, soy sauce,
  • ½ cup chicken stock
  • 2 tsp cornflour
  • 2 cups crispy noodles
  • 10 oyster mushrooms, halved if large
  • peanuts or cashews for garnish


  1. Break broccoli into florets. Blanch in hot water or microwave on full power for 2-3 minutes and then refresh in cold water.
  2. Cut all the spring onions into three equal lengths.
  3. Heat the oil in a wok or frying pan and add the broccoli and toss 2 minutes. Add the spring onions and ham and toss a further 2 minutes.
  4. In a jar mix together the oyster sauce, soy sauce, stock and cornflour. Add to the pan, stirring well until lightly thickened. Add crispy noodles and mushrooms. Warm through and serve immediately, garnished with peanuts or cashews.
