Grilled Tomatoes On Bruschetta


  • 1 sour dough loaf, thickly sliced
  • 1 clove garlic, halved
  • olive oil for drizzling
  • 300 grams cherry tomatoes, halved
  • 2 tblsp chopped fresh coriander or parsley
  • ¼ tsp garam masala
  • ¼ tsp ground cumin
  • grated rind and juice half lemon
  • 4 tblsp olive oil
  • salad greens or rocket leaves to accompany


  1. Grill the bread on both sides until golden. Rub the top with the cut side of the garlic and drizzle with olive oil.
  2. In a small bowl gently mix together the cherry tomatoes, coriander or parsley, garam masala, cumin, lemon rind and juice and olive oil. Stand for 10 minutes.
  3. Arrange salad greens on top of the warm bread. Spoon the tomato mixture onto the bruschetta and garnish with the grated lemon rind if wished.

Cooks Tips

Sourdough breads have a wonderful chewy texture and a slightly tangy flavour. They are ideal to grill and serve this way as they soak up the juices. Sourdough also freezes well. Subsitute cherry tomatoes with diced roma tomatoes.
