Ingredients
- 1 sour dough loaf, thickly sliced
- 1 clove garlic, halved
- olive oil for drizzling
- 300 grams cherry tomatoes, halved
- 2 tblsp chopped fresh coriander or parsley
- ¼ tsp garam masala
- ¼ tsp ground cumin
- grated rind and juice half lemon
- 4 tblsp olive oil
- salad greens or rocket leaves to accompany
Method
- Grill the bread on both sides until golden. Rub the top with the cut side of the garlic and drizzle with olive oil.
- In a small bowl gently mix together the cherry tomatoes, coriander or parsley, garam masala, cumin, lemon rind and juice and olive oil. Stand for 10 minutes.
- Arrange salad greens on top of the warm bread. Spoon the tomato mixture onto the bruschetta and garnish with the grated lemon rind if wished.
Cooks Tips
Sourdough breads have a wonderful chewy texture and a slightly tangy flavour. They are ideal to grill and serve this way as they soak up the juices. Sourdough also freezes well. Subsitute cherry tomatoes with diced roma tomatoes.
