Truffle shavings left over on the chopping board are never wasted - Lynley uses them to add a stylish touch to seasonal vegetables.
Ingredients
- 500 grams green beans, trimmed
- 2-3 tablespoons extra virgin olive oil
- few shavings of truffle, chopped
Method
- Cut half of the beans in half. Cook all of the beans in boiling salted water until just tender.
- While the beans are cooking, heat the oil in a frying-pan. When hot, add the truffle shavings and toss in the hot oil for a minute or until the oil is very fragrant. Drain the beans well, add to the pan and toss to coat. Serve immediately.
