Green beans with truffle

Truffle shavings left over on the chopping board are never wasted - Lynley uses them to add a stylish touch to seasonal vegetables.


  • 500 grams green beans, trimmed
  • 2-3 tablespoons extra virgin olive oil
  • few shavings of truffle, chopped


  1. Cut half of the beans in half. Cook all of the beans in boiling salted water until just tender.
  2. While the beans are cooking, heat the oil in a frying-pan. When hot, add the truffle shavings and toss in the hot oil for a minute or until the oil is very fragrant. Drain the beans well, add to the pan and toss to coat. Serve immediately.
