Perhaps your grandmother made this sweet treat for a Sunday dinner. Perfect on a winter's eve with lashings of whipped cream.
Ingredients
- 125 grams butter, softened
- 2 cups flour
- 3 teaspoons baking powder
- about 1 cup milk
- about ½ cup jam
- Syrup
- ¾ cup boiling water
- ¾ cup sugar
- 75 grams butter, melted
Method
- Preheat the oven to 180ºC. Lightly grease a 6-cup capacity ovenproof dish.
- Rub the butter into the flour and baking powder until the mixture resembles fine crumbs and make a well in the centre. Add sufficient milk to make a soft dough.
- Turn out onto a lightly floured surface and just bring together.
- With a floured rolling pin, roll the dough out to about 1cm thickness. Spread the jam over the dough leaving a 1cm edge all the way round free of jam. Roll up like a Swiss roll and place in the prepared dish.
- Make the syrup by stirring together the water, sugar and butter and pour over the roll.
- Bake in the preheated oven for about 45 minutes until the roll is golden and well risen. Serve sliced with a little of the sauce and custard or cream.
Cooks Tips
Variations: - Use different jams. - Sprinkle about ½ cup dried fruit over the jam before rolling up. - Add the grated rind of 1 orange or lemon to the dough.
