Goat Or Sheep Cheese Tarts

Goat Or Sheep Cheese Tarts

These simple tarts look and taste delicious.


  • 6 slices white sandwich bread
  • 2 tblsp butter, softened
  • 100 grams goat or sheep cheese, sliced thinly into 24 pieces
  • 2 eggs
  • 3 tblsp cream fraiche
  • salt and pepper to season
  • 2 tblsp fresh thyme leaves


  1. Cut 4 x 4cm rounds from each slice of bread. Use a Champagne flute as a cutter. Butter each round and press buttered side down into the base of a mini muffin tin.
  2. Top each bread round with a slice of goats cheese.
  3. In a small bowl mix the eggs, cream fraiche and salt and pepper together and pour over each tart base. Sprinkle with thyme leaves.
  4. Bake at 200°C for 10 minutes. Serve warm.
