Gingernut, oat and apple crumble

Apple crumble in its many guises is probably one of every family's most loved puddings. Crushed-up gingernut biscuits add flavour and crunch.

Ingredients

  • 100 grams gingernut biscuits, roughly broken
  • 1 cup wholegrain or rolled oats
  • ½ cup flour
  • ½ cup white or brown sugar
  • ½ cup thread, flaked or desiccated coconut
  • 125 gram butter, melted
  • 3-4 cups stewed apples, hot

Method

  1. Preheat the oven to 180ºC.
  2. In a bowl stir together the gingernut biscuits, oats, flour, sugar, coconut and butter.
  3. Put the hot apples into an 8-cup capacity ovenproof dish. Scatter over the crumble mixture.
  4. Bake in the preheated oven for 30-40 minutes. Serve dusted with icing sugar.

Cooks Tips

- For the crumble to cook correctly, ensure the fruit is hot before scattering the crumble over. Variations: - Use another favourite sweet biscuit, un-iced of course. - Add spices such as ginger, cardamom or mixed spice.
