
Easy and quick and likely to become a firm family favourite.
Ingredients
- 50 grams dark chocolate
- 125 grams cream cheese
- 2 tblsp finely chopped crystallized ginger
- 2 tblsp cream or yoghurt
- 2 tblsp sugar
- 8 -10 sweet biscuits
Method
- Chop chocolate and melt in the microwave.
- Beat together the cream cheese, ginger, cream or yoghurt and sugar.
- Spread half the biscuits with a little of the cream cheese mixture. Dip the remaining biscuits into the chocolate, sufficiently to coat the top of each. Sandwich together. Chill for 30 minutes before serving.
Cooks Tips
- Try Walker’s Ginger Shortbreads for a treat or for something more family orientated, good old Gingernuts. - In place of cream cheese, use lite cream cheese, or mascarpone.
