Ginger Shortbread Creams

Easy and quick and likely to become a firm family favourite.


  • 50 grams dark chocolate
  • 125 grams cream cheese
  • 2 tblsp finely chopped crystallized ginger
  • 2 tblsp cream or yoghurt
  • 2 tblsp sugar
  • 8 -10 sweet biscuits


  1. Chop chocolate and melt in the microwave.
  2. Beat together the cream cheese, ginger, cream or yoghurt and sugar.
  3. Spread half the biscuits with a little of the cream cheese mixture. Dip the remaining biscuits into the chocolate, sufficiently to coat the top of each. Sandwich together. Chill for 30 minutes before serving.

Cooks Tips

- Try Walker’s Ginger Shortbreads for a treat or for something more family orientated, good old Gingernuts. - In place of cream cheese, use lite cream cheese, or mascarpone.
