Ginger Apple Crumble


  • 1 kg cooking apples
  • ¼ cup water
  • 1¼ cup brown sugar
  • 1 cup flour
  • 1 cup rolled oats
  • 1 tsp ground cardamom
  • 150 grams butter
  • 1½ - 2 tblsp chopped crystallized ginger


  1. Peel, core and slice the apples. Cook with the water and a quarter of a cup of the brown sugar for 10 minutes or until tender.
  2. Sift the flour into a bowl and stir in the, rolled oats, remaining brown sugar and cardamom. Rub in the butter and then stir in the crystallized ginger.
  3. Put the cooked apples into a 6-cup-capacity ovenproof dish, top with the crumble mixture. Cook at 180°C for 30 minutes or until golden and cooked through.
  4. Serve with yoghurt, custard or ice cream.
