Gin And Berry Brulee

An easy way to finish a meal with a flourish.


  • 1 cup mixed berries (eg blueberries, raspberries and blackberries)
  • 1-2 tblsp gin
  • 2 tblsp icing sugar
  • 300 grams mascarpone
  • 2 tblsp brown or demerara sugar


  1. Toss the berries, gin and icing sugar together and pile into four 3/4-cup ramekins. Set aside for 1 hour.
  2. Spoon the mascarpone over the fruit and then sprinkle with brown sugar.
  3. Grill under a high heat until the sugar has begun to brown and the mascarpone is slightly melted. Serve with crisp dessert biscuits.
