Fruit and Ginger Muffins

Fruit and Ginger Muffins

Apples or feijoas can be used in these wheat-free muffins with a hint of almond.

Ingredients

  • ¾ cup rice flour
  • ¾ soy flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • ¼ cup sugar
  • ¾ cup ground almonds
  • 1 cup diced apples or poached feijoas
  • ½ cup light olive oil
  • ¾ cup milk
  • 2 eggs
  • ¼ cup passionfruit pulp (or use apricot jam)

Method

  1. Sift the flours, baking powder, baking soda and ginger into a large bowl and stir in the sugar and ground almonds and make a well in the centre.
  2. In a bowl mix together the fruit, olive oil, milk, passionfruit pulp and eggs. Pour into the centre of the dry ingredients and stir together gently.
  3. Divide the mixture evenly among 12 well-greased muffin tins.
  4. Bake at 160ºC for 30 minutes.
