The best way to enjoy these is to eat them hot, straight from the pan.
Ingredients
- 4 tablespoons olive oil
- 4 cloves garlic, crushed and peeled
- 1 green chilli, deseeded
- 1 tablespoon paprika
- 500 grams green prawns, shelled
- 1/4 cup sherry
- 2 sundried tomatoes in oil, well drained
- 2 teaspoons sea salt
- freshly ground black pepper to season
Method
- Heat the olive oil in a heavy cast frying pan. Add the garlic, chilli, paprika and cook over a moderate heat for about 3 minutes until fragrant.
- Increase the heat and add the prawns. Cook, tossing, until the prawns become pink. Add the shery and boil rapidly for 1 minute.
- Slice the sundried tomatoes finely and add to the pan with the salt and pepper.
- Serve warm with forks for guests to help themselves from the pan.
Cooks Tips
- Handle chllies with care. Slit them in half lengthwise and scoop out the seeds with a spoon. Slice the chilli finely. Then wash your hands with soapy water as chillies (especially the seeds) can cause burns if you rub your eyes.
