Fresh Peach Melbas

Fresh Peach Melbas

This dessert will bring back memories for many - and please all ages.


  • 2 cups raspberries (fresh or frozen)
  • 2-3 tblsp icing sugar
  • 1 litre good quality vanilla icecream
  • 4 juicy, very ripe peaches
  • fresh mint sprigs to garnish


  1. Reserve half a cup of the raspberries.
  2. Puree the remaining raspberries in a food processor or blender, sweeten with sugar to taste then sieve to remove pips.
  3. Slice peaches into wedges.
  4. Pour a little raspberry sauce into the bases of 4 tall sundae glasses. Layer with vanilla icecream and peaches.
  5. Pour over the remaining raspberry sauce.
  6. Decorate with reserved raspberries and mint sprigs.

Cooks Tips

- Canned peaches can be used in place of fresh peaches.
