Fragrant Lentil And Basmati Pilaf


  • 1 onion, peeled and finely chopped
  • 2 tblsp oil
  • 2 cups Basmati rice
  • 1 cup red lentils
  • 4 tblsp Korma curry paste
  • 4½ cups water
  • 1 cinnamon stick (optional)
  • 4 hard-boiled eggs (quartered)
  • 2 tblsp chopped fresh coriander
  • 1 red pepper, finely sliced


  1. Cook the onion in the oil in a large saucepan until tender. Add the rice, lentils, curry paste and cook a further 2 minutes.
  2. Stir in the water and cinnamon stick, lower the heat to its lowest setting and simmer for 20 minutes until the rice if cooked.
  3. Using a fork, fluff in the red pepper and coriander and serve garnished with the eggs and extra coriander leaves if wished.
