Ingredients
- 1 onion, peeled and finely chopped
- 2 tblsp oil
- 2 cups Basmati rice
- 1 cup red lentils
- 4 tblsp Korma curry paste
- 4½ cups water
- 1 cinnamon stick (optional)
- 4 hard-boiled eggs (quartered)
- 2 tblsp chopped fresh coriander
- 1 red pepper, finely sliced
Method
- Cook the onion in the oil in a large saucepan until tender. Add the rice, lentils, curry paste and cook a further 2 minutes.
- Stir in the water and cinnamon stick, lower the heat to its lowest setting and simmer for 20 minutes until the rice if cooked.
- Using a fork, fluff in the red pepper and coriander and serve garnished with the eggs and extra coriander leaves if wished.
