Delicious to have with coffee.
Ingredients
- ½ cup sultanas
- ½ cup raisins
- 70 grams slivered almonds toasted
- ½ cup chopped dried apricots
- ½ cup halved glace cherries
- 2 tbsp chopped crystallised ginger
- 3 tbsp mixed peel
- 2 cups cornflakes, lightly crushed
- 397 gram can sweetened condensed milk
- 120 grams dark chocolate
Method
- Line a 18cm x 28cm slice tin with baking paper.
- In a large bowl, combine sultanas, raisins, almonds, apricots, glace cherries, ginger, mixed peel, cornflakes and condensed milk and mix well.
- Spread evenly over the base of the tin. Cook at 180°C for 18-20 minutes or until golden and cooked through. The slice continues to harden on cooling. Allow to cool in the tin.
- Melt the chocolate in the microwave or in a bowl over a pan of hot water.
- Turn the slice upside down and remove baking paper. Spread the melted chocolate over the base and then chill until set. Store in an airtight container, in a cool place. Cut into slices to serve.
