Florentine Slice

Delicious to have with coffee.

  • ½ cup sultanas
  • ½ cup raisins
  • 70 grams slivered almonds toasted
  • ½ cup chopped dried apricots
  • ½ cup halved glace cherries
  • 2 tbsp chopped crystallised ginger
  • 3 tbsp mixed peel
  • 2 cups cornflakes, lightly crushed
  • 397 gram can sweetened condensed milk
  • 120 grams dark chocolate

  1. Line a 18cm x 28cm slice tin with baking paper.
  2. In a large bowl, combine sultanas, raisins, almonds, apricots, glace cherries, ginger, mixed peel, cornflakes and condensed milk and mix well.
  3. Spread evenly over the base of the tin. Cook at 180°C for 18-20 minutes or until golden and cooked through. The slice continues to harden on cooling. Allow to cool in the tin.
  4. Melt the chocolate in the microwave or in a bowl over a pan of hot water.
  5. Turn the slice upside down and remove baking paper. Spread the melted chocolate over the base and then chill until set. Store in an airtight container, in a cool place. Cut into slices to serve.
