Figlets In Rosemary And Vanilla Syrup

Put this syrup in nice jars as a special gift to share with friends and family.


  • 1 vanilla pod, split or 2 tsp vanilla essence
  • 500 grams figlets
  • 3 cups water
  • 2 cups sugar
  • 5cm sprig fresh rosemary
  • 2 oranges, grated rind and juice


  1. Place the figlets, water, sugar, rosemary, vanilla pod or essence and orange rind and juice into a large saucepan and boil gently for 15 minutes until the figlets, the plums and the syrup thickens.
  2. Bottle into hot sterilised jars and seal. Label and gift-wrap. Serve with ice cream for a special dessert.
