Fettucini with baby sweet corn and basil

The great thing about pasta is being able to creat so many fabulous dishes. Baby sweet corn add a new flavour dimension to pasta and when paired with lightly smoked chicken and topped with fresh basil you have a great casual meal.

Ingredients

  • 1 bunch, about 6 spring onions
  • 2 rashers bacon
  • ½ red pepper
  • 75 grams butter
  • 2 tablespoons flour
  • 1½ cups chicken stock
  • ¼ tub sour cream, or ricotta cheese
  • 425 gram can baby sweet corn, well drained
  • 1 smoked double chicken breast
  • basil and pepper to finish with
  • fettucine pasta for 4

Method

  1. Trim the spring onions and chop finely on the angle. Cut the rind from the bacon and chop the flesh into long strips. Finely slice the red pepper.
  2. Heat the butter in a saucepan and add the spring onions, bacon and peppers and allow to simmer for about 3-4 minutes. Do not allow the butter to burn. Add the flour and cook a further minute.
  3. Stir in the stock and sour cream and allow the sauce to simmer while slicing the corn. Cut the corn lengthwise in half. Remove the skin from the chicken and slice finely. Add to the sauce.
  4. Cook the pasta in boiling salted water until al dente. Drain well and toss in the sauce. Garnish with torn basil and ground black pepper. Serve hot.

Cooks Tips

- If you do not have a can of baby sweet corn, use 2 cups of frozen super sweet corn or a drained can or corn kernels.
