Feijoa and Lime Muffins

Feijoa and Lime Muffins

Feijoas make wonderful partners to tart limes.


  • 3 cups flour
  • 5 teaspoons baking powder
  • 1 cup caster sugar
  • 3 eggs
  • 1¼ cups milk
  • ½ cup peeled, finely chopped feijoas
  • 125 grams butter, melted and cooled
  • Glaze
  • 2 tablespoons caster sugar
  • 2 tablespoons orange juice
  • grated rind and juice 2 limes


  1. Sift the flour, baking powder and sugar into a large bowl and make a well in the centre.
  2. In a jug, mix together the eggs and milk and add the feijoas. Stir into the dry ingredients, and fold in the melted butter.
  3. Divide the mixture evenly among 12 -126 well-greased muffin tins. The number will depend on the size of the muffin tins.
  4. Bake at 200ºC for 15-20 minutes until cooked.
  5. Stand for 2 minutes before brushing with the glaze. Stand a further 5 minutes before serving.


  1. Simmer the sugar, orange juice and lime juice together until the sugar has dissolved.

Cooks Tips

- Feijoas are available from around March until June. Out of those times, try finely chopped kiwifruit, bananas, pawpaw or fresh pineapple.
