Feijoas make wonderful partners to tart limes.
Ingredients
- 3 cups flour
- 5 teaspoons baking powder
- 1 cup caster sugar
- 3 eggs
- 1¼ cups milk
- ½ cup peeled, finely chopped feijoas
- 125 grams butter, melted and cooled
- Glaze
- 2 tablespoons caster sugar
- 2 tablespoons orange juice
- grated rind and juice 2 limes
Method
- Sift the flour, baking powder and sugar into a large bowl and make a well in the centre.
- In a jug, mix together the eggs and milk and add the feijoas. Stir into the dry ingredients, and fold in the melted butter.
- Divide the mixture evenly among 12 -126 well-greased muffin tins. The number will depend on the size of the muffin tins.
- Bake at 200ºC for 15-20 minutes until cooked.
- Stand for 2 minutes before brushing with the glaze. Stand a further 5 minutes before serving.
Glaze
- Simmer the sugar, orange juice and lime juice together until the sugar has dissolved.
Cooks Tips
- Feijoas are available from around March until June. Out of those times, try finely chopped kiwifruit, bananas, pawpaw or fresh pineapple.
