Feijoa and apple filo tarts


  • 6 sheets filo pastry
  • 50 grams butter, melted
  • 1 tablespoon liquid honey
  • 1 egg
  • 250 grams mascarpone
  • 70 gram packet ground almonds
  • 2 tablespoons mixed peel
  • 1-2 apples, peeled, cored and sliced
  • 2-3 feijoas, peeled and sliced into wedges
  • extra honey to drizzle


  1. Lightly grease 6x 7-8cm tart tins.
  2. Cut the filo into quarters and brush each piece with butter. Layer four pieces into each tin.
  3. Mix together the honey, egg, mascarpone, ground almonds and peel. Spoon equal amounts into the prepared filo-lined tins.
  4. Arrange the apples and feijoas on top of the almond mixture and drizzle with extra honey.
  5. Bake at 200ÂșC for 15-20 minutes or until golden and cooked through. Serve warm, garnished with orange rind.

Cooks Tips

- This recipe can be made in a single 22cm flan tin. Baking time will be 35 minutes.
