
Ingredients
- 400 gram can mangoes, well drained
- 4 tblsp lime or lemon juice
- 1 tsp grated lime or lemon rind
- 1 cup cream, lightly whipped
- ½ cup thick plain yoghurt
- lime rind and toasted coconut to garnish
Method
- Puree half the mango with lime juice and rind in the food processor until smooth. Dice the remaining fruit.
- Fold the whipped cream and yoghurt with half the mango puree.
- Add the chopped mango to the remaining puree.
- Turn the whipped cream mixture into a serving dish and swirl the remaining mango puree through gently so that you can see it.
- Garnish with the toasted coconut and lime rind or toasted almonds and lime rind.
