Dunkin' Cookies

Ingredients

  • 150 grams butter, softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla essence, optional
  • 3 tablespoons warm milk
  • 1 tablespoon golden syrup
  • ½ teaspoon baking soda
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 cup sultanas or chocolate chips

Method

  1. Preheat the oven to 160ºC and grease or line one to two baking trays.
  2. Beat together the butter, sugar and vanilla essence if using, until the mixture looks pale in colour. You can do this with a bowl and wooden spoon, or by using an electric mixer. Stir together the warm milk, golden syrup and baking soda - it will become thick - and gradually beat into the creamed mixture.
  3. Sift the flour and baking powder together and work into the creamed mixture with the sultanas or chocolate chips.
  4. Roll dessertspoonfuls of mixture into balls and place on the prepared trays, leaving room for spreading. Flatten biscuits with a fork.
  5. Bake in the preheated oven for 10-12 minutes, or until the biscuits have become a light sandy brown colour. Transfer to a cake rack to cool. Store in an airtight container. These biscuits will keep well for 2-3 weeks.
