Over-indulgent and yes - divine.
Ingredients
- 4 medium-sized starchy potatoes
- 4 bay leaves
- 100 grams duck fat, melted
- 1 teaspoon flaky salt
Method
- Preheat to the oven to 200°C.
- Peel the potatoes and take a thin slice from the base of each so that the potatoes sit steadily on a base. Place two chopsticks on a chopping board either side of the potato. Use a sharp small knife to cut this slices through the potato, stopping at the chopping sticks, which prevent you slicing right through the potato.
- Place a bay leaf in the centre slice of each potato. And toss in the melted fat and salt. Arrange on a baking tray.
- Bake on an oven tray in the preheated oven for 35-40 minutes or until cooked, golden and crispy.
OR YOU COULD...
- Add 1 teaspoon minced garlic with the fat.
