Rich Chocolate Muffin with a chocolate fudge centre, a real treat for chocoholics.
Ingredients
- 125 grams dark chocolate
 - ¼ cup cream
 - 2½ cups flour
 - ½ cup cocoa
 - 1 cup caster sugar
 - 2 tsp baking powder
 - 1 tsp baking soda
 - ½ tsp salt
 - 2 eggs
 - ¾ cup non-fat plain yoghurt
 - ¼ cup cream
 - 1 cup cold water
 - 100 grams butter, melted and cooled
 
Method
- Break the chocolate into pieces and place in a heatproof jug with the cream. Microwave for 1 minute on high or until the chocolate has melted. Stir well and leave until cool enough to roll into 12 even shaped balls.
 - Sift the flour, cocoa, sugar, baking powder, baking soda and salt into a bowl and make a well in the centre.
 - In a jug blend together the eggs, yoghurt and second measure of cream and water. Blend into the dry ingredients and fold in the butter as you go.
 - Half fill 12 well greased muffin tins with the mixture. Place a chocolate fudge ball in each and top with the remaining muffin mix.
 - Bake at 220 degrees Celsius for 15-18 minutes until well risen and cooked.
 - Cool in the tin for 5 minutes before dusting with icing sugar to serve.
 
Cooks Tips
- There are so many different chocolates on the market for cooking with. Milk chocolate does not have enough flavour. I use Cadbury's Energy Chocolate which I find gives the best result. - If you do not have yoghurt, substitute 1 cup sour cream for the yoghurt and second measure of cream.
