Ingredients
- ¼ cup each Worcestershire sauce, brown sugar and sweet sherry
- 1 tsp minced fresh garlic
- 1 tsp dry mustard powder
- 4 single chicken breasts
Garnish
- 1 cup each finely diced kumara, carrot and onion
- ½ cup chicken stock
- 4 rashers streaky bacon
Method
- In a bowl, blend together the Worcestershire Sauce, brown sugar, sherry, garlic and mustard. Toss the chicken in the marinade and leave for one hour.
- Bake at 200 degrees Celsius for 25 minutes until golden.
- In a frying pan cook the kumara, carrot and onion in a dash of oil until well browned. Add the chicken stock, cover and cook until tender. Grill the bacon until crispy.
- Serve the chicken on top of the vegetables with grilled bacon rashers and slices fruit such pawpaw or mango and fresh herbs.
