Devilled Chicken

Devilled Chicken


  • ¼ cup each Worcestershire sauce, brown sugar and sweet sherry
  • 1 tsp minced fresh garlic
  • 1 tsp dry mustard powder
  • 4 single chicken breasts


  • 1 cup each finely diced kumara, carrot and onion
  • ½ cup chicken stock
  • 4 rashers streaky bacon


  1. In a bowl, blend together the Worcestershire Sauce, brown sugar, sherry, garlic and mustard. Toss the chicken in the marinade and leave for one hour.
  2. Bake at 200 degrees Celsius for 25 minutes until golden.
  3. In a frying pan cook the kumara, carrot and onion in a dash of oil until well browned. Add the chicken stock, cover and cook until tender. Grill the bacon until crispy.
  4. Serve the chicken on top of the vegetables with grilled bacon rashers and slices fruit such pawpaw or mango and fresh herbs.
