Deli Beef Schnitzel

Create a stunning schnitzel sandwich with prepared deli ingredients.


  • 4 slices grilled aubergine
  • 4 beef schnitzels
  • 8-12 sundried tomatoes
  • slices of canned or roasted artichokes
  • pepper and a handful of fresh oregano leaves to season
  • 2 eggs
  • seasoned flour to coat
  • breadcrumbs to coat


  1. Place a slice of grilled aubergine on one half of each of the beef schnitzels.
  2. Top each with 2-3 sundried tomatoes and a few slices of canned artichokes, and season with pepper and fresh oregano leaves.
  3. Fold over the remaining half of each schnitzel to enclose the filling.
  4. Beat eggs together. Coat schnitzels in flour, shake off the excess, dip into the beaten egg, then cover with breadcrumbs. Chill for 10 minutes.
  5. Shallow fry the schnitzels in olive oil over a moderate heat for 2-3 minutes each side until golden brown. Drain on absorbent paper.
  6. Cut in half and serve with seasonal vegetables or fresh green salad.

Cooks Tips

Vary the crumb texture and taste by using dry breadcrumbs, panko crumbs or fresh wholemeal or white breadcrumbs. For additional flavour, spread the schnitzels with caper paste or basil pesto. Look for grilled aubergine slices in the deli section of your supermarket.
