Apple slices soaked in honey syrup and dried in the oven make a quick dessert when layered with frozen yoghurt or ice cream.
Ingredients
- 2 eating apples, (Braeburns are good)
- ½ cup runny honey
- ½ cup water
- frozen apricot yoghurt
- few peach slices (fresh or canned)
- summer fruits
- icing sugar
Method
- Remove the stem from the apple.
- Using a very, very sharp knife, cut across the apple (do not peel or core) into about 12-16 wafer-thin slices. If you have a mandolin, this will make perfect slices. If you are nervous about holding the apple, srecure it with a fork and use a serrated edged knife.
- Place the honey and water in a saucepan and bring to the boil. Boil for 3 minutes until the syrup has thickened.
- Soak the apple slices in the syrup for about 2 minutes. Place in a single layer onto baking paper or a Teflon baking sheet.
- Dry in a 120ºC oven for 1-1½ hours, depending on the apple variety, until the apple slices are crisp. Cool on a wire rack and store in an airtight container.
- Place one apple slice in the centre of a plate. Place a scoop of frozen yoghurt and a few slices of peach on top and repeat once more. Finish with an apple slice. Serve dusted with icing sugar and accompanied with seasonal summer fruits.
