The sharpness of raspberries balances the sweetness of meringue in this quick and easy dessert.
Ingredients
- 300 ml cream
- ¼ cup icing sugar
- ½ tsp vanilla essence
- 250 grams fresh raspberries, lightly crushed
- 4 meringues, lightly crushed
- 70 gram packet flaked almonds, toasted
- 1 tblsp of gin (optional)
Method
- Whip the cream, icing sugar and vanilla essence together until soft and thick.
- Fold in the raspberries, meringues, toasted almonds and the dash of gin, if using. Pile into glasses with extra berries to serve.
