Crisp Berry Mousse

The sharpness of raspberries balances the sweetness of meringue in this quick and easy dessert.


  • 300 ml cream
  • ¼ cup icing sugar
  • ½ tsp vanilla essence
  • 250 grams fresh raspberries, lightly crushed
  • 4 meringues, lightly crushed
  • 70 gram packet flaked almonds, toasted
  • 1 tblsp of gin (optional)


  1. Whip the cream, icing sugar and vanilla essence together until soft and thick.
  2. Fold in the raspberries, meringues, toasted almonds and the dash of gin, if using. Pile into glasses with extra berries to serve.
