Creamy Smoked Chicken And Chive Fettuccini

This is a great hassle free dish that is great for a mid-week meal.

Ingredients

  • 400 grams fresh fettuccini pasta
  • 25 grams butter
  • 1 bunch spring onions, trimmed and chopped
  • 1 tblsp minced garlic
  • 250 grams creme fraiche
  • 1 cup chicken stock
  • 1 tsp wholegrain mustard
  • ½ smoked chicken, shredded
  • 2 tblsp chopped chives

Method

  1. Cook the fettucini in boiling salted water for 7-8 minutes or until al dente. (Check cooking times on the packet).
  2. Melt the butter in a large frying pan and panfry the spring onions and garlic until softened, but not brown.
  3. Stir in the creme fraiche, chicken stock, wholegrain mustard, chicken and chives, and heat through.
  4. Add the drained pasta to the sauce and toss to mix. Season with salt and pepper if wished. Serve immediately garnished with grated parmesan cheese.
