Cranberry And Ginger Champagne Cocktail

Bubbles are the only way to go with someone special on St. Valentine’s Day.

Ingredients

  • pickled ginger (see Cook’s Tips)
  • cranberry juice
  • Champagne, well chilled (see Cook’s Tips)

Method

  1. Place a piece of pickled ginger into the bottom of each flute glass. Top each with 2 tablespoons cranberry juice. Fill each glass with chilled champagne.

Cooks Tips

- You will find pickled ginger in the Japanese food section at your local supermarket or at Asian food stores. Pickled ginger is prepared from thinly sliced ginger marinated in sweet vinegar. It will keep indefinitely in the fridge. - While French Champagne is a wonderful treat, one of New Zealand's fine sparkling wines can easily be used in its place.
