Cranberry And Apple Syrup Cakes

Cranberries have become quite a favourite dried fruit in a very short time. Try them with caramalised apples in this delicious cake recipe.

Ingredients

  • 750 grams apples (about 4), peeled and diced
  • 300 grams butter
  • ½ cup dried cranberries
  • ¼ cup sugar or honey
  • grated rind and juice one orange
  • 2 tsp Surebake yeast
  • 1½ cups icing sugar
  • 4 eggs
  • 2 cups flour
  • ½ tsp ground ginger (optional)

Syrup for Cakes

  • ½ cup freshly squeezed and strained orange juice
  • ¼ cup Grand Marnier or Cointreau
  • ¼ cup sugar

Method

  1. Cook the apples in 50 grams of the butter in a frying pan until softened. Sprinkle in the craisins and sugar or honey and cook until the apples caramalise. Cool.
  2. Stir the orange juice and yeast together.
  3. Beat the remaining butter, icing sugar and orange rind together until creamy. Beat in the eggs. Carefully fold in the yeast mixture, flour, ginger, cooled apple mixture and cooking juices.
  4. Turn into 6-8 well-greased 13cm cake tins or 1x 25cm tin.
  5. Bake at 180ºC for 40 minutes until firm to the touch. The 13cm cakes will take 40 minutes to cook and the 25cm cake 1 hour.
  6. Heat the fresh orange juice, Grand Marnier or Cointreau and the sugar together until the sugar has dissolved. When the cakes are cooked, remove from the oven and pour the orange juice syrup over the cakes evenly. Cool and serve with whipped cream if wished.
