Craisin  And Almond Turnovers

These turnovers are very easy to prepare but will impress your guests and family.

Ingredients

  • 75 grams butter, softened
  • 1/4 cup castor sugar
  • few drops almond essence (optional)
  • 1 egg
  • 1/2 cup self rising flour
  • 1/2 cup ground almonds
  • 1/2 cup Craisins
  • 3 sheets frozen ready rolled puff pastry, defrosted
  • egg or milk for glazing

Method

  1. Cream the butter, sugar and almond essence, if using, together until light and creamy. Add the egg and beat well.
  2. Sift the flour and stir into the creamed mixture with the ground almonds and Craisins.
  3. Cut each piece of pastry in half, diagonally and divide the filling between the six pieces placing the filling on one half of each pastry and within 2cm of the edges. Dampen the edges, fold over to form a triangle and press firmly together. Make two slits on the top of the turnovers. Brush with a little egg or milk. Place on a greased baking tray.
  4. Bake at 200°C for 25 minutes until the pastry is well risen and golden. Serve with whipped cream.

Cooks Tips

- Craisins are dried cranberries, mainly produced by Ocean Spray. You’ll find them in the baking section of the supermarket. - To defrost ready to roll pastry sheets, separate out the frozen sheets on the kitchen bench, where they will defrost quickly and evenly.
