
Ingredients
- 1 prepared flan base, see basic short pastry recipe if making your own
- 4 medium tomatoes, blanched, peeled and sliced
- 1 courgette, trimmed and sliced finely
- 3 spring onions, trimmed and finely chopped
- ½ cup cream
- 2 eggs
- 2 tablespoon pesto
- 2 tablespoons parmesan or cheddar cheese
Method
- Prepare the flan base (see recipe basic short pastry on our website).
- Sprinkle the spring onions over the base of the flan and arrange the slices of courgette and tomato on top.
- Beat together the eggs, cream and pesto. Season with pepper. Pour over the tomatoes. Sprinkle with parmesan cheese.
- Bake at 200ºC for 20-30 minutes until set and golden.
