Courgette, tomato and pesto flan


  • 1 prepared flan base, see basic short pastry recipe if making your own
  • 4 medium tomatoes, blanched, peeled and sliced
  • 1 courgette, trimmed and sliced finely
  • 3 spring onions, trimmed and finely chopped
  • ½ cup cream
  • 2 eggs
  • 2 tablespoon pesto
  • 2 tablespoons parmesan or cheddar cheese


  1. Prepare the flan base (see recipe basic short pastry on our website).
  2. Sprinkle the spring onions over the base of the flan and arrange the slices of courgette and tomato on top.
  3. Beat together the eggs, cream and pesto. Season with pepper. Pour over the tomatoes. Sprinkle with parmesan cheese.
  4. Bake at 200ºC for 20-30 minutes until set and golden.
